As news of the Jolie-Pitt split circulates tonight I am drinking their rosé, Miraval, and grilling this healthy fishy supper. Let’s hope everyone can behave well and give them some space, for the sake of the kids. The big question I have is who gets to keep the rosé? This fish is not only high in protein and Omega-3 fatty acids it’s also low in mercury and on the Monteray Bay Aquarium’s list of healthy fish to include in your diet. The American Heart Association recommends eating this type of fish twice a week. Cooking whole fish is, I must admit, a little intimidating and takes a little getting used to – perhaps it’s the fishes eyes staring at me? I also have an issue with filling the house with post dinner fishy smells which is why I love grilling it outside on my DCS grill. Have your fishmonger, in my case McCalls Fish and Meat on Hillhurst, prep the fish so that all you need to do is pat it dry and stuff it full of fresh herbs before dousing them with rosé. Packed with basil, tarragon, dill and lemon and cooked in rosé on the grill produces a flavorful succulent fish every time.
I made a foil boat to put on the grill so that the delicate fish skin isn’t lost and it also acts as a container for the Miraval rosé that I like to add to the fish. And last but not least clean up is a doddle.
I plated the fish with the herbs and lemon still in the cavity but you can remove them if you wish – just be sure to tell the lucky person who is going to eat this that they can eat the fish and leave the greens. Serve straight from the grill with a glass of chilled rosé Miraval for an exceptional Lean Luxury dinner.
